Sustainable Food Menu

Philosophy: This menu is 100% environment friendly with special focus on table land grown vegetables and use of natural processing methods for maintaining quality dishes.

Summer and Winter Menu

1-The menu is as follows – Fermented Apple.

Cooking process fermentation, it serves single person

This dish reduces anti-nutrients and supports optimal digestions. The use of Apple will provide seasonal flavor to the customers. This dish will be served as a starter in menu. The Apple picked fresh in January to June. The southern region of Tasmania has fresh apple produce.

2-Grilled eggplant

It is soaked and used with breadcrumbs and frilled in oven. This dish is served hot. It is served for four. The dish will be available in June to September

The egg plants is fried with olive oil and is wrapped in parchment paper for eco-friendly cooking as an alternative to aluminum foil to wrap the dish while serving with bread crumbs

3-Avocado chickpea sandwich

It is prepared through fresh herbs and served with lemon juice on top

The dish contains avocado vitamin C richness and the dish will be available throughout the year. Avocado is stored in glass product storage. The avocado is produced through organic from our local farms certification

4-Potato herbs

This dish is cooked with low rise in our kitchen with garden fresh herbs and potato. The dish is available round the year. The natural pre-heat and solar energy and water resources are used in the restaurant for producing herbs with aim to reduce carbon footprints

5-Mushroom Garden

Mushroom are served with green chili, serves 2

The dish is available for winter season. 

We use micro fiber technology to reduce the incident of chemicals and sustainable cleaning for our produce before cooking. The mushroom cultivation is through organic farms 

6- Smoked salmon

Salmon is cooked with charcoal components with tomato purrie. The drained smoke herring is marine steward certified

7-Truffled eggs mousse

The dish is served cold, it is available around the year.

The truffle egg is cooked through cooling the mixture with egg composted and truffle at the cool temperature for delicious dessert.

8- Tacos

The dish serves two, will be served around the year

This dish is micro biotic dish with sea vegetables. This is vegan dish with organic whole grains contains nutritional value.

9- Hummus

This dish serves four people, it is available only in summer season

It is cooked with lemon juice garlic paste, is served with bread. This is prepared traditionally with baked bread. The bean dip are freshly sourced though organic supplier.

10- Baked Lasagna

Baked lasagna is served in pocket size, serves two.

This dish is available around the year. The topping used is of cashew cream produced through bio-dynamic which makes the dish healthy and reduce incidence of non-vegan elements in the dish.

11- Veg Arepas

The dish is served hot and is cooked in olive oil. It serves four and is available around the year. The dough is made through whole grains from the farms and is served with avocado. The fiber sensor is used for quantity measure to reduce waste.

12- Corn tomato rice

This dish serves two, it is cooked through roasting corns. It is available in winter season only and using flavors of jalapenos, tomato. The dish uses home grown corn seeds and rice.
